I got my new Smoker assembled tonight. After a good cleaning, it'll be ready for its first bbq this saturday. Pulled pork and chicken.. Mmmmm. I plan on doing a large blog update this weekend.

What temp did you cook it at? I was under the impression you just got yourself a charcoal grill, but a smoker's different eehhh?? Dang.

Yep.. very different. The smoker cooks completely with indirect heat and moisture. And I have no idea what temperature it was cooking at. The damn cheaper model that I bought has a really crappy thermometer that on says "Warm, Ideal, Hot" wtf.. So I need to buy a new thermometer and drill a hole in the grill so I can mount it. My guess is that it was cooking around the 200 degree mark.

But I screwed up the cooking process.. the water pan holds so much water, I should have used near boiling water to start off with, as well as adding more almost boiling water during the cooking process. Because the water pan holds basically a gallon of water, I believe the warm water I was using was sucking all the heat out, leaving me with a longer cooking process. Try and error at this point, but I'll get the hang of it.
