The Guinness Ribeye

This is a recipe I found online, with a few personal modifications. Whether you like Guinness Beer or not really isn't the issue. This makes some good tasting Ribeyes.

For this you will need:

  • 1 USDA Choice/Prime Ribeye steak
  • 2 garlic cloves
  • 1 ounce soy sauce
  • 1 tablespoon Vidalia onion
  • 1 teaspoon shallots
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon fresh tarragon
  • 1/4 teaspoon parsley
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon salt
  • And of course Guinness Beer

These measurements are suggestions. Alter them after you own taste, if you want more garlic, less Dijon, and more pepper, that's entirely up to you. It really depends on the thickness of your steak... and how many steaks you plan to cook. But for this, lets just say its one.

-Pour the Guinness into the container you plan to marinade your steak in and make sure you fill it up enough to where at least half the steak will be submersed into it.

-Chop up the garlic, shallot, parsley, tarragon and onion and toss it in. Add the Worcestershire sauce, Dijon mustard, soy sauce, salt, and pepper next.

-Make sure its nice and mixed up, and then let it sit for 30 minutes to an hour without the meat. This will allow the ingredients to bond.

-Take your Ribeye and stab it a few times with a fork on both sides and drop it in the marinade. The tiny holes you made will soak up the juice better.

-Cover your container and let it soak for 6-10 hours in the fridge. I don't recommend any less than that, but if you have to, no less than 4 hours. Make sure you flip the steak over half way through the duration.

-Finally, Its time to cook. If you pan sear your stake, pour the remaining marinade over the steak while it cooks, and maybe a little more Guinness out of the bottle you're drinking from. ;) Do this a little bit at a time until the juice cooks into the steak, then repeat. You don't want to boil your steak.

-If you grill, take a marinade brush, and brush the remaining marinade onto the steak until the desired temperature. I recommend medium, as I am not a fan of well-done.

It's a lot of work, but I assure you it is well worth it. As much as I love the grill, I prefer the pan sear method for this one, just be sure you have a pan that will get hot enough to cook it evenly.

Yes it does matter. Coors light is too weak, the worcestershire sauce will overpower it so you probably wont taste it. Guinness is a very strong tasting beer, and it reflects in the marinaded stake. Other porter beers might work as well, such as Yuengling Black & Tan or Sierra Navada. Dark beer is the key. Also the 6-10 hours of soak time is very important.

Believe it or not, this recipe is superior to the Maker's Mark one I have. I'll post that one later.

Its pretty close to boddingtons, might be a little stiffer. Just make sure you don't get Guinness Extra Stout. I like it but is pretty much the strongest tasting beer I've ever had, Its almost like coffee. LOL Is there anywhere that sells single bottles? Try one, if you like Boddingtons, you should like Guinness... its one of those occasion beers, where you have to be in the mood.

When you marinade, that distinct flavor comes out, but its not overpowering, It adds to the meat flavor of the ribeye. I know Strider likes Guinness as well, and someone else on here as well.

Red Stripe will be too weak, but Boddington's should come out pretty good. Its that stout flavor you are looking for to get into your steak.

      Well my dryer broke after about 15 years and multiple repairs I've done over those years. I had to buy a new dryer. So far so good. I was finally able to get my laundry done again and my bathroom no longer smells like dirty socks and febreeze.

      FML my pressure tank is failing for my well. Its getting replaced next week. Getting a new whole house water filter installed too along with some new valves and safety upgrades. Props to the well company employee for giving me the tip of hooking up an air compressor to the pressure tank to put some air in the bladder to get the system gimping along until the repair work is done. I miss public water. lol.

      This has been a busy summer. I'm almost looking forward to winter so I can get a break from all the lawn mowing and outside projects. Hopefully the snow blower I bought this year works good so I'll have alot of free time this winter to get caught up on things. When I've had free time I've been playing Final Fantasy X over the last 5 months and I've somehow finally hit 100 hours on it. Lol. Only took me about half a year.  I still didn't beat it yet but I'm at the end game stuff now with the monster arena and omega ruins.

      I got back from Ohio last night. My mom had a Remembrance Party in honor of my dad this last weekend. It was a really nice time. I'm glad I got to see so many people that knew my dad and talk to them about how he was a positive and/or great influence in their lives. The party was a bbq party too. My younger brother smoked 30 pounds of pulled pork and 20 pounds of bbq beef. I helped with the process. It was a great time.
